what makes a truffle bar
a truffle bar?

Most chocolate snaps. A truffle bar softly gives way. Our chocolatier partner, Maestrani, has been perfecting this unmistakable texture in Switzerland for generations. The creamy center of our layer bars is whipped until it’s light, airy, and melts effortlessly on the tongue. Then it’s wrapped in a shell of rich chocolatey goodness, ready for that first, magical bite.

Swiss excellence

For centuries, the Swiss have been hard at work putting their legendary precision and thirst for innovation to the ultimate good: chocolate. In the 1800s, the invention of conching helped give Swiss chocolate its signature melt-in-your-mouth texture. We’ve carried that tradition forward with our partners at Maestrani, who have been making chocolate since 1852, to create a chocolate recipe that’s smooth, creamy, and just right. After plenty of hard work – and more than a few taste tests – it’s finally your turn to enjoy the results.

Regenerative Organic Certified® chocolate

All Magic Chocolate truffle bars are made with Regenerative Organic Certified® cocoa and cane sugar. This standard combines demanding requirements for ecology and soil fertility with provisions for climate protection, Fair Trade practices, and animal welfare.

frequently asked questions

All of Magic Chocolate products are certified fair trade under the Fair for Life program, which is overseen by the respected international certifier, Ecocert.

“Fair trade” means that the prices paid to farmers, as well as the wages & working conditions of farm & factory workers, are fair. For example, the price we pay cocoa farmers for their cocoa crops is 15% higher than the conventional price. In case of low market prices, at least the fair trade minimum price is paid. This safety net assures that costs of production are always covered, and that the farmer earns an income, and enables them to meet their basic needs, such as good food & accommodation, schooling, the ability to participate in social life, and provisions for times of need. An additional 10% is paid into a fair trade fund (estimated $80,000 per year, on average) for community development projects in education, healthcare & infrastructure. These are just a few of the many ways we ensure true fair trade partnerships with farmers & workers.

Regenerative Organic Certified® is the highest holistic gold standard for agricultural integrity in the world. It goes beyond avoiding harm to actively healing ecosystems through three interconnected pillars:

  • Living Soil Health: Rebuilding depleted dirt into vibrant subterranean ecosystems. By using dynamic agroforestry, organic compost and cover cropping, ROC farms pull atmospheric carbon down into living soil, increasing crop fertility and water retention.
  • Farmworks Fairness & Livelihoods: Ensuring the human beings who grow our food are treated as equal partners. This means fair living wages, safe working conditions and direct economic empowerment for cooperatives like KANY across 7,900 acres of farmland.
  • Holistic Ecosystem Care: Protecting biodiversity and native canopy trees so farms function like resilient forests.

Yes! All Magic Chocolate flavors are gluten free. Our chocolate bars are certified gluten-free (to 10 ppm gluten or less), in accordance with the standards set by the GFCO.

There is no risk of cross-contamination potential. Our chocolate is not manufactured on processing equipment that is also exposed to gluten products.

Yes! Every Magic bar is made without added dairy. We use oat milk for our milk chocolate because it brings the sweetness and creaminess of cow’s milk with a lighter footprint. Most people don’t notice until we tell them. And that’s the point.

Hazelnuts and Almonds are present in some of our products. Additionally, some Magic products are made on equipment that also process milk and soy. Check each product's ingredient list to ensure no allergens that may affect you are present.

Our products are kosher but not halal.

It's important to us to use high quality organic ingredients that leave the earth better off than we found it. We use Regenerative Organic Certified® cocoa and sugar that meets demanding requirements for ecology and soil fertility with provisions for climate protection, Fair Trade practices, and animal welfare. These high standards are the reason our products are slightly more expensive.

Proper storage is crucial to preserving the quality and flavor of chocolate. Magic Chocolate should be stored in a cool, dry place away from sunlight and strong odors at a temperature range of 65–75°F (18–23°C) for optimal texture and taste. Though storing your chocolate in the fridge technically extends its shelf life, it can decrease the quality of its taste and texture. When you eat it, refrigerated chocolate will not melt as easily or smoothly, and the cocoa butter can bloom if allowed to warm to room temperature after being chilled. Additionally, storing chocolate in the fridge for an extended period allows for the smells of other foods to negatively impact the chocolate.

Chocolate is a very shelf-stable product and doesn’t “go bad” the way other foods do. Properly stored dark chocolate usually will retain its full flavor for about two years at room temperature, and oatmilk chocolate will continue to taste delicious for 18 months to 2 years. Our truffle bars stay creamy and fresh for 12 months.

After the printed “best if used by” date, the chocolate isn’t harmful to eat, but it may not taste as fresh or flavorful as it once did and chocolate bloom is more likely to appear.

We’re sorry that you experienced this. Melting is natural and happens to all chocolate at some point. If your Magic Chocolate has melted, the best thing to do is enjoy it gooey rather than cooling or attempting to re-solidify it. We recommend dipping your favorite fruits, nuts, or cookies into the melted chocolate or drizzling it on yogurt, ice cream, or even popcorn. A partially melted bar offers a great opportunity  for baking cookies or brownies.

If your chocolate arrived melted, that's on us. Get in touch and we'll make it right.

Magic Chocolate is an emulsion of fats and solids: Regenerative Organic Certified® cocoa butter and cocoa solids paired with organic sugar. These ingredients are carefully mixed and cooled by our master chocolatiers at Maestrani in Switzerland to create a stable crystalline structure in a process called tempering. Tempering is what gives chocolate a beautiful shine, a snappy crunch, and a creamy mouthfeel that melts evenly on the tongue.

White film or dull streaks on chocolate products are common occurrences known as chocolate or cocoa butter bloom. Bloom is the result of the chocolate’s crystalline structure breaking down, causing the cocoa butter to rise to the surface and create a lighter coloration and the subtle changes in taste and mouth feel. This can occur when chocolate has experienced major shifts in temperature, such as when it is transported from a temperature-controlled grocery store to a warm car and then into an air-conditioned house. Fully melted chocolate that is rapidly cooled often develops an opaque layer of white cocoa butter on the surface of the bar. Bloom can even occur in chocolate products that have been handled and stored responsibly.

Bloomed chocolate is perfectly safe to eat, but it may not be as flavorful or creamy. We suggest repurposing melted chocolate as a dipping sauce or drizzle, or as an ingredient in baking recipes. While chocolate does not continue to bloom at a rapid rate, we suggest using it within a month or two of the initial bloom.
